Wok hei
The wok runs at full flame.
A carbon steel wok on a high gas burner gets far hotter than a home stove. Food sears in seconds instead of stewing in its own liquid. Cantonese cooks have a name for the smoky char that heat leaves behind: wok hei, the breath of the wok. It fades within minutes of leaving the pan, which is why we start every order from raw.
